Time to Just Be

Back to my happy place. My sister is a magical creature (a diva in the vocal sense, not the self-involved sense) who regularly charms the karaoke room and has actually sang with a band on more than one occasion. If she lived in the town where she’d sang with the band, she’d probably be their regular vocalist. I can carry a tune, and my voice is decent, I guess, but I’ve always had a problem with projecting/ being heard when there are other singers/ musicians in the room. But our plan is me doing the guitar & backup vocals and her singing lead. She thinks we’ll be famous- I don’t care. I’m in it for love of music and for fun. Oh yes. One more thing. I only know how to play one song. I never expected it, but my sister Melody is my #1 fan.Continue Reading

Delving Into Salads for Digestive Health

So… I’ve been playing around with salads. (Not like that- at least, as far as you know.) Let me rephrase that. Lately I’ve been experimenting with different components in my home-concocted salads that I haven’t tried before. Last week I tried adding rutabaga, (a turnip-like vegetable that is a bit firmer and sweeter than its peppery cousin.) This week it was bok choy and raw beets.Continue Reading

    I loved this post! I am CONSTANTLY looking for healthy, yet cost-effective meals.

    My favourite salad is one that can only be made well in the summer…but I’ll share my recipe!

    3 oz diced chicken
    1 cup Romaine (yes, I know Romaine is about as nutritionally void as Iceberg, but it really IS my favourite for this salad)
    3 sliced strawberries
    8 cucumber slices
    2 tbsp crumbled feta (I vastly prefer French feta, but Greek is good, too)
    1 tbsp sunflower seeds
    2 tbsp strawberry vinaigratte

    Wishbone used to make a KILLER berry salad dressing, but discontinued it. Now, I take Ken’s fat free raspberry pecan dressing and crush some frozen and thawed strwberries, blueberries and cherries in it. It’s pretty good that way! Someday I will develop my own berry vinaigrette, but for now, this will do. :-)

    Anyway, this salad is phenomenal, but the strawberries have to be fresh in the salad, so summertime is the only time to do it.
